This hit the pizza craving like nobody's business. I may not actually crave pizza for at least another day. I may have a pizza problem, but now I know this salad will hit the spot.
1 roma tomato, deseeded and diced
1/2 green pepper, deseeded and diced
10 slices turkey pepperoni, sliced
5 calmata olives, sliced
1/4C mozzarella, shredded
2 Tbsp tomato juice
1/2 Tbsp olive oil
1/2 Tbsp red wine vinegar
1 clove garlic, pressed
1 Tbsp basil, cut into thin pieces
1/8 tsp dried oregano
1/8 tsp red pepper flakes
Salt and pepper to taste
Combine all ingredients. Toss. Let sit for at least a half hour to blend flavors. Serve over a bed of lettuce (my choice is Organic Girl baby spring mix).
